old .vs. new system

%UserProfile% = on systems:
Old system: C:\Users\Galloway
New System: C:\Users\csgal\

I use programs that store the value of %UserProfile% so what command would work to subsitute old value for new value?

Also how do I work around having OneDrive on my new and not on my old?
